01 - 1 cup fresh lemon juice
02 - 1 cup water
03 - 1/2 cup granulated sugar
04 - 3 envelopes unflavored gelatin powder (about 2 1/2 tsp each; total approximately 7 1/2 tsp)
05 - Zest of 1 lemon

→ Gummy Bear Layer

06 - 1 cup assorted gummy bears (approximately 10–15 per serving cup)

07 - Fresh mint leaves (optional)

# How to Prepare:

01 - Combine lemon juice, water and granulated sugar in a small saucepan; evenly sprinkle the gelatin over the surface and let it sit undisturbed for 2 minutes to bloom.
02 - Warm the mixture over medium heat, stirring constantly until the sugar and gelatin are completely dissolved and the liquid is smooth; do not allow to boil. Remove from heat and stir in the lemon zest.
03 - Place 10–15 gummy bears into the base of each of six clear serving cups, spacing them evenly for the best visual presentation.
04 - Carefully pour the warm lemon-gelatin mixture over the gummy bears, dividing it evenly among the cups and filling to the desired level.
05 - Allow the filled cups to cool at room temperature for about 10 minutes, then transfer to the refrigerator and chill for at least 2 hours or until fully set.
06 - Just before serving, garnish each cup with a mint leaf and a thin lemon slice if desired.
